[Katakuri House] May–June Special: "Wild Vegetable Cuisine Special Plan"—Experience Spring in Akiyamago

Summary

Katakuri House has launched a new plan to savor the flavors of the season.

This upgraded plan adds wild mountain vegetable dishes and char dishes to the Standard Plan. It is recommended for those who want to fully enjoy the fresh wild mountain vegetables that are only available during this season. Wild mountain vegetables from heavy snowfall areas are said to be milder and easier to eat because they grow beneath the snow, resulting in less bitterness and a milder flavor.We prepare wild vegetable tempura, simmered dishes, and tsukudani using ingredients harvested from nearby mountains, such as fiddlehead ferns, butterbur shoots, wild wasabi leaves, udo, katakuri, bracken, wild garlic, and bent bamboo shoots. You can also enjoy char baked in foil and seasoned with butterbur miso.Furthermore, we offer Katakuri House’s original creations, such as kogomi tossed with soybean paste and mayonnaise, and lotus root hamburgers served with wild garlic. Please savor these bounties of the mountains—unique to this lush, natural mountainous region and available only in spring—paired with delicious Koshihikari rice grown in Ishigakida.

Morning Walk

Our staff will guide you to “Mikura Bridge” or “Ketto’s Stone-Walled Rice Fields,” two of Akiyamago’s most iconic tourist spots. Let’s take a walk together in the crisp morning air. During this season, you can see wild mountain vegetables such as Japanese knotweed, Japanese angelica, Japanese butterbur, butterbur, and Japanese knotgrass, as well as plants like the fragrant magnolia blossoms that bloom during rice-planting season and the beautiful purple flowers of the Chinese bellflower. This tour is open to all guests staying at our facility.
