Following the previous exhibition, the original burger supervised by Chef Yonezawa Fumio will be sold. The burger, created by a chef who knows the local ingredients inside and out, is a menu item that cannot be found anywhere else. The burger is made by sandwiching “pulled pork,” a chunk of Echigo-Tsumari pork that has been slow-cooked until it is tender and tender and then broken into small pieces, topped this time with ginger sauce and Kagura Nanban mayonnaise as an accent!

Chef / Yonezawa Fumio

After working at a restaurant in Tokyo, he went to New York by himself in 2002 and was selected as the first Japanese sous chef at the main restaurant of Jean-Georges, a high-end French restaurant that continues to win three stars every year. After returning to Japan, he worked as an executive chef at a famous restaurant in Japan, and was selected as the chef de cuisine of the restaurant when “Jean-Georges” opened its first restaurant in Japan in 2014. In 2022, he will establish No Code Co. He is expanding his field of activities regardless of genre. He is also active in the “Echigo-Tsumari Art Triennale” and supervises recipes at the “Ronald McDonald House,” a facility that supports sick children. He is also a member of the “Super Daddy Association,” a group of fathers with a “cool father figure,” and actively holds workshops and other events. He is actively involved in a variety of activities to bring out children’s curiosity about food.
