Original burgers supervised by Chef Fumio Yonezawa are now available at MonET’s 1F community space. In spring, we started with “TSUMARI BURGER ~ Tsumari Pork Special Menchikatsu” which was introduced last year, and in summer, we offered “Tsumari Pork and Kagura Nanban Tartar Dumpling Burger” which was sold out on many days.
And starting this fall (Sept. 29), we will be introducing a new item, the “TSUMARI PULLED PORK BURGER”! A South American meat dish, this burger is filled with pork marinated with several spices, smoked, low-temperature roasted, and then carefully torn (pulled). Walnuts and maitake mushrooms from Echigo-Tsumari are sandwiched between the burger to give it a different texture. The burger is a special menu item that cannot be found anywhere else. Please come and try it.
Homemade craft cola will also be available until Nov 13. It is a refreshing drink with mint and lime and goes perfectly with TSUMARI BURGER. Please enjoy it together.
The burger is available for purchase and eating at the community space on the ground floor designed by Ryohin Keikaku Co., Ltd. (Take-out available)
Born in Tokyo in 1980. He went to New York alone in 2002 after having worked in restaurants in Tokyo and appointed as the first Japanese sue-chef at Michelin -three-stared French restaurant Jean-Gerges. He worked as head chef in various restaurants after returning to Japan and took up a position of chef-de-cuisine in Jean-Georges Tokyo in 2014. He has been a head chef at THE BURN in Aoyama, Tokyo since September 2018.
Since 2015, he has been active in the Echigo-Tsumari Art Triennale and supervises recipes at the Ronald McDonald House, a facility that supports sick children. He is also a member of the “Super Daddy Association,” an organization for fathers with a “cool father figure,” and actively holds workshops, etc. From 2022, he will establish “No Code,” a joint-stock company. He is expanding his activities by participating in a variety of initiatives regardless of genre.
