The Italian chef known as the leading cook of mushroom in England demonstrated his cooking skills using the local mushrooms of Tsumari. He held a workshop to make canes and hunt mushrooms in the woods with them. After that, he cooked freshly picked mushrooms and served tasty Italian dishes, including pasta with maitake and eringi in red wine sauce, salad with eringi, velvet shanks and black truffles.
