“Cooking” is made up of a series of actions: preparation, production (cooking), finishing (dishing up) and cleaning up. These actions are what “making things” has always been about. However, the situation is different if there is a customer involved. In the first place, the above steps cannot be followed in order : the actions are all mixed up. While one dish is being made, another order is just coming in. Preparation for the next day must start; and cleaning up has to be done in the intervals of cooking. There is no beginning and end to the actions. Everything is smoothly connected. A chef who has mastered that series of actions becomes an unseen “performer.”I wanted to make a “tunnel” for seeing the unseen. A tunnel is something that is not seen from the outside. We repeatedly go through the tunnel with that tunnel. And then the outside of the tunnel is seen even as we are inside the tunnel.
